Does eating healthier ever start to feel like the same bland meals over and over again?

Simple meals can make healthy eating easier, but eating the same flavors every week can get boring fast. And when your food stops being enjoyable, staying consistent becomes a lot harder.

This Steak with Chimichurri & Parmesan Green Beans keeps the simplicity but changes the experience.

Tender steak is topped with a bright homemade chimichurri made with fresh herbs, garlic and red wine vinegar, then paired with garlicky green beans finished with Parmesan.

At approximately 40g of protein and 450 calories per serving, it's proof that a balanced, protein-focused dinner doesn't have to taste like "diet food."

Why You'll Love This Recipe

Big on flavor: Fresh herbs, garlic, red wine vinegar and Parmesan make a simple steak dinner anything but boring.

High in protein: Approximately 40g of protein per serving makes it a satisfying lunch or dinner.

Fresh ingredients: Chimichurri gets its flavor from parsley, cilantro, garlic and herbs rather than relying on a heavy sauce.

Vegetables you'll actually look forward to: Parmesan and garlic give the green beans plenty of flavor while keeping the side simple.

Ready in about 30 minutes: Impressive enough for a nice dinner without requiring hours in the kitchen.

Easy to repeat: Once you've made the chimichurri, this is the kind of simple formula you can use with other proteins and vegetables too.

Steak with Chimichurri & Parmesan Green Beans Recipe

                                          Ingredients

For the Steak

1 lb flank steak or sirloin
Salt and pepper to taste
1 tbsp olive oil

For the Chimichurri Sauce

1 cup fresh parsley, chopped
¼ cup fresh cilantro, chopped
3 garlic cloves, minced
¼ cup red wine vinegar
½ cup olive oil
½ tsp red pepper flakes (optional)
Salt and pepper to taste

For the Green Beans with Parmesan

1 lb green beans, trimmed
1 tbsp olive oil
2 garlic cloves, minced
Salt and pepper to taste
¼ cup grated Parmesan cheese

                            Instructions

1. Season the steak

Season the steak generously with salt and pepper.

2. Heat the pan or grill

Heat olive oil in a skillet or grill pan over medium-high heat.

3. Cook the steak

Cook the steak for approximately 4–5 minutes per side for medium-rare, or cook to your preferred doneness.

Let the steak rest for about 5 minutes, then slice it against the grain.

4. Make the chimichurri

In a bowl, combine the parsley, cilantro, garlic, red wine vinegar, olive oil, red pepper flakes if using, salt and pepper.

Stir well and allow the sauce to sit for at least 15 minutes so the flavors can develop.

5. Prepare the green beans

Heat olive oil in a large skillet over medium heat.

Add the garlic and sauté for approximately 30 seconds.

6. Cook the green beans

Add the green beans, season with salt and pepper, and sauté for approximately 6–8 minutes, or until tender-crisp.

Remove from the heat and toss with Parmesan cheese.

7. Serve

Arrange the sliced steak with the Parmesan green beans and spoon the fresh chimichurri over the steak.

Serve and enjoy.

Healthy Food Should Still Be Food You Crave

Consistency becomes much easier when the meals supporting your goals are meals you genuinely enjoy.

You don't necessarily need an entirely different ingredient list every night. Sometimes changing the herbs, seasonings and sauces is enough to transform familiar foods into something completely different.

That's what the chimichurri does here.

It takes a simple combination of steak + vegetables and gives it enough fresh, bold flavor that eating well doesn't feel like something you're forcing yourself to do.
