Steak & Chickpea Power Bowl Recipe

                                                  Ingredients

For the Bowls

1 lb cooked NY strip steak, sliced thin
2 cups chickpeas, rinsed & drained
1½ cups cooked quinoa
1 cup cherry tomatoes, halved
1 cup cucumber, diced
2 cups baby spinach
½ red onion, thinly sliced
¼ cup crumbled feta cheese
2 tbsp chopped parsley

For the Tahini Dressing

¼ cup tahini
2 tbsp lemon juice
1 tbsp olive oil
1 tbsp low-sodium soy sauce
1 tsp honey
1 garlic clove, minced
2–3 tbsp water to thin
Salt & pepper to taste

                                       Instructions

1. Prepare the steak

Cook the steak to your liking, allow it to rest, and then slice it thinly.

2. Make the tahini dressing

In a small bowl, whisk together all of the dressing ingredients until smooth.

Add water gradually until the dressing reaches your preferred consistency.

3. Assemble the bowls

Divide the spinach, quinoa, chickpeas, tomatoes, cucumber, red onion and steak among four meal-prep containers.

4. Add the toppings

Sprinkle each bowl with feta cheese and freshly chopped parsley.

5. Store the dressing separately
