1½ cups (180g) vanilla protein powder
1 cup (120g) oat flour (blend oats until fine)
½ cup (100g) plain nonfat Greek yogurt
½ cup (120ml) unsweetened almond milk
¼ cup (60ml) unsweetened applesauce
2 large eggs
2 tbsp (30ml) maple syrup or honey
1 tbsp (15ml) vanilla extract
1½ tsp baking powder
¼ tsp salt
Instructions
1. Preheat the oven
Preheat your oven to 350°F (175°C).
Grease an 8-inch round or square baking pan, or line it with parchment paper.
2. Combine the dry ingredients
In a large bowl, whisk together the protein powder, oat flour, baking powder and salt.
3. Combine the wet ingredients
In another bowl, whisk together the Greek yogurt, almond milk, applesauce, eggs, maple syrup or honey, and vanilla extract until smooth.
4. Make the batter
Pour the wet ingredients into the dry ingredients and mix until just combined.
Avoid overmixing.
5. Fill the pan
Pour the batter into your prepared baking pan and smooth the top.
6. Bake
Bake for approximately 25–30 minutes, or until a toothpick inserted into the center comes out clean.
