INGREDIENTS
For the Steak
• 1½ lbs flank steak
• 2 tbsp low-sodium soy sauce
• 1 tbsp rice vinegar
• 1 tbsp sesame oil
• 2 cloves garlic, minced
• 1 tbsp fresh ginger, grated
• 1 tbsp honey or maple syrup
• ½ tsp crushed red pepper
• ½ tsp black pepper
• 2 green onions, sliced (for garnish)
• 1 tsp sesame seeds (for garnish)
For the Couscous
• 1 cup whole wheat couscous
• 1¼ cups low-sodium vegetable broth
• 1 tbsp sesame oil
• 1 cup shredded carrots
• ½ red bell pepper, diced
• ½ cup edamame
• 2 green onions, sliced
• 1 tbsp soy sauce
• 1 tsp rice vinegar
• 1 tsp sesame seeds
INSTRUCTIONS
1. Prepare the marinade
In a bowl, whisk together soy sauce, rice vinegar, sesame oil, garlic, ginger, honey, red pepper, and black pepper.
2. Marinate the steak
Place flank steak in a resealable bag or shallow dish and pour the marinade over it. Let it marinate for at least 30 minutes, or up to 4 hours.
3. Cook the steak
Heat a grill or skillet over medium-high heat. Grill the steak for 4–5 minutes per side for medium-rare, or to your liking. Remove and let rest for 5 minutes, then slice thinly against the grain.
4. Prepare the couscous
While the steak cooks, bring the vegetable broth to a boil in a small pot. Stir in couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
5. Combine the couscous mixture
In a large bowl, toss couscous with sesame oil, carrots, red bell pepper, edamame, green onions, soy sauce, and rice vinegar. Mix well.
6. Serve
Serve the sliced steak over the couscous and top with sesame seeds and green onions.
